Vegan Caesar Salad Dressing

This original recipe for vegan Caesar salad dressing is so creamy and flavorful, you won't believe it isn't the "real" thing! Packed with protein from the tofu and full of healthy, tangy ingredients, you can add this dressing to any lettuce base for an easy, vegan Caesar salad. Just don't forget the croutons - or check out my video for a crunchy alternative!

Ingredients

  • 200 grams silken tofu 

  • 1/4 cup olive oil

  • 1/4 cup water (you can add less for a thicker salad dressing)

  • 3 tablespoons lemon juice

  • 1 tablespoon nutritional yeast (AKA nooch)

  • 1 tablespoon red wine vinegar

  • 1-2 cloves garlic, roughly chopped

  • 1 1/2 teaspoons capers OR 3-5 roughly chopped olives

  • 1 teaspoon white miso paste

  • 1 teaspoon Dijon mustard

  • 1 teaspoon kosher salt

  • 1/4 teaspoon freshly ground black pepper, or to taste

Instructions

  1. Add all of the ingredients to a blender of your choice. I like using an immersion stick blender. Blend until smooth and creamy.

  2. Taste for seasoning. Add more lemon, salt or pepper to taste. 

  3. Toss with salad base of your choice, croutons, and/or vegan cheese. I'm not vegan, so I usually add regular Parmesan - shh! 

  4. Store the dressing in a tightly sealed glass bottle in the fridge. It should keep for around 2 weeks, so it's good to make in batches! This dressing gets used up very quickly in my household.

What is "nooch"? And why is it in so many vegan recipes?

Nooch is the nickname of nutritional yeast - a dried yeast product that is very high in vitamin B and has a decent amount of protein. It has a savory, cheesy flavor, which is why you might see it as a cheese substitute in many vegan recipes. Like in this vegan Caesar salad dressing!
